Primal ‘Cue is a Veteran owned barbecue catering company based in Sun Prairie, Wisconsin. We have gone back to the basics allowing wood, fire and smoke to take barbecue back to its roots.
Our service area starts in Madison and covers all of Wisconsin, Northern Illinois, Iowa, and Minnesota.

50/50 experience: Brisket and chicken thighs were solid performers! The brisket shined, some of the best I've ever had. Boneless thighs were also great and the perfect sauce dipping vessel. Ribs and Mac were well below average... The ribs could pass for mediocre jerky... Bummed I wasted $32 on an entire rack. The Mac was flavorless reheated paste. Hopefully this small business make it because the potential is definitely there! A couple improvements in the rib and mac and this place would easily make this place a 5/5!

We hired primal cue for a pig roast luau party at our assisted living facility and Andrew did such an incredible job demonstrating the roast and the roast was delicious! He had to start roasting in the middle of the night for the roast to be ready for our meal! absolutely incredible highly recommend!

My girlfriend and I visited earlier today, and from the moment we walked in, we were warmly greeted, great first impression. The customer service was excellent, and the food exceeded our expectations.
We ordered the ribs, and you could immediately tell they were cooked with care. They had a beautiful smoke ring, were tender yet had just the right firmness, and the seasoning was perfectly balanced. The pork burnt ends were also delicious—the sauce was rich and flavorful. The portion was on the smaller side, but the taste more than made up for it.
My girlfriend especially loved the mac and cheese, which was creamy and comforting. The cornbread with butter was the perfect finishing touch—served warm, soft with a crisp bottom, and paired with sweet butter that we couldn’t get enough of.
Overall, an outstanding experience—10/10. We’ll definitely be coming back!

FANTASTIC!! I had ribs, mac and cheese, and cheesy potatoes. Ribs were perfectly seasoned, didnt eaven need sauce, but had a little just to try it. Meat was delicious. Meat easly came off the bone. You could tell the macaroni and cheese was smoked, but not overpowering. Creamy and so good. Potatoes were tasty also. Cornbread had a crunchy crust and also delicious. Its a traditional walk up counter service like down south.
The owner Andrew was on site, and very nice. Will I go back again? Hell yes!!!

We visited the first time when the location initially opened and were really impressed with everything offered. The smoked meats were great and we didn't think anything could be improved.
Our second visit left something to be desired, though. Service was phenomenal and food was delivered quickly. A well oiled machine to be sure, and very competent staff!
However, I spent $20 on a bowl of lobster Mac n cheese and while the lobster flavor was present in the sauce, I searched in vain for the source of flavor. Either the lobster had been so processed that it had just incorporated completely into the sauce, or I was unlucky enough not to have any included in my portion. The noodles were so soft, you barely needed to chew.
The portions for the meats were okay. The burnt ends were almost jerky dry and the sauce overpowered the flavor of the pieces.
We raved about the location when we first went because everything was shiny and new and it was wonderful. We made a special trip to come back and I am disappointed at having dropped $70 on just... "Okay." We had gone out of our way because we loved it the first time, and while we will still keep this on the roster of places to go because we're hoping this is just a one-off feeling, we'll will wait until we're in the area again.

Had the spare ribs with cole slaw and baked beans. Ribs were too soft and under seasoned. Not terrible, as they were okay, but if you want better ribs, pick a baby back cut and go to North and South. Cale cole slaw was the highlight, and I wish they had cornbread. This place might be coasting on the veteran vibe, but thank you for your service.

So, this was my first time at Primal Cue. My son and I ordered a three meat platter and cornbread muffins with honey butter. Everything was excellent, down to the pickles and pickled onions, but the burnt ends…OMG! They were outstanding! My son even remarked, "Do you think this is how the food tastes in heaven?!! And the sauces were great too! We were greeted by co-owner, Brandon, the moment we walked in the door and he stopped by our table to make sure we were enjoying everything! He also took the time to chat with us and share a little bit about his story. All in all, it was a great experience and I can’t wait to go back again…especially for some more of those burnt ends!!! I would highly recommend this place!

Order : 2 meat platter brisket/ribs w/side of mac n cheese and cheesy potatoes.
Overall summary would be as little wording as "Fantastic". Of all the brisket I have had in Madison and surrounding areas, this was hands down the best. A nice balance of tender meat and beautifully rendered fat that just melts. The ribs fell off the bone and the charred smokey seasoning was immaculately done. Stopped in on a Wednesday for the lunch special. As soon as we got out of the car you could smell the wood from the smokers, always a good sign! Andrew the owner met at us at the door and explained the ordering process since it was our first time (definitely not our last!). We ordered the brisket and pulled pork sandwiches and brisket burger with Mac and cheese. Inside the place was clean and the atmosphere very appealing. A bonus was the on tap root beer!! The food came out quickly and smelled amazing. I've never tried a brisket burger before and it was better than expected. It had a perfect char to the outside and was tender and flavorful. The pulled pork had a distinct and delicious smoke flavor to it. It was very tender and extremely tasty. Our favorite overall, which isn't fair to try and pick, was the brisket sandwich. Again it had a delicious taste, the texture was great and tenderness was fantastic. The Mac and cheese was creamy and cooked to perfection, not too soft not too hard but just right. Andrew told us about his culinary experience and background. Being from the south it's no wonder he hits everything perfectly here. Current on Wednesday they only have the lunch sandwich specials until 4pm when the full menu becomes available. We will definitely come back as everything was right on for a great BBQ place. Having tried BBQ in the south this is so far the best we've had in the north. A bonus is that Andrew is an Army vet (hooah!!) and we love supporting our vets!! They also have a rewards program that's generous if you become a regular. If you're a BBQ person and I mean you've had true southern BBQ you'll love this place. Andrew cautioned though they do run out on weekends so earlier is probably safer. Keep up the great work Primal Cue we will see you again!!

Great BBQ place. Got the ribs and the wife got the loaded mac n cheese. Was definitely in the top 3 for ribs I have had, The staff was very friendly and the service was great. Also like that they had outdoor seating. Saw a giant pretzel come out that took up an entire baking pan sheet. Definitely coming back and recommend it.

We’ve been to Primal Cue many times but this evening, we had the pleasure of chatting with Brandon, the co-owner and chef. Brandon (or Andrew) always check in about how our meals are, but today, we got to spend some really quality time with him talking about food and beyond! His passion for his craft so visibly comes through and I am grateful to have a community member and business owner like him in Sun Prairie. And of course, our meal was INCREDIBLE. The prime rib was perfectly done, and with the crispy seasoned edge, more flavorful than anything we’ve had! The Mac and cheese and cheesy potatoes are amazing, as usual, and the green beans were a surprise hit! Thanks again Brandon for a great Saturday evening!

You won't find better barbecue anywhere in Madison and maybe not even in Wisconsin.
Andrew is a military man from all parts of the South and was clearly invited to all the barbecues. My favorite is the brisket (marbled) and the ribs. Favorite sides are the mac and cheese and the baked beans. Splurge on the cornbread for $2. You will not regret it.
Best barbecue I've had since leaving the South (FL, AL, GA). Fridays seem to be safe but don't come in late on a Saturday after 7 because they run out of food quickly! Trust me, they make enough, it's just that good and you need to get in early.

My pick for Best BBQ in Madison and maybe the whole state of Wisconsin …and we are spoiled for choice these days. Everything is excellent. All of the meats are wonderfully tender and seasoned. The sauces are rich and varied. All the sides are good, particularly the slaw, which comes separate from the sauce so it doesn’t get soggy.

One of my favorite new local restaurants! I love brisket Tacos on Taco Tuesday, my son loves the Brisket burgers; he'll often eat 2 after one of his hockey games (HS teenager), I've even stopped in for breakfast in the past, the brisket hash was amazing, but the ribs are my all time favorite! The food is very good. You order your food at the counter and then find a table and it's brought out to you when ready. We had a pork sandwich and the ribs.
The meat was tender and tasty even without the sauces. You can choose from a variety of sauces and the two we chose were quite good. The cheesy potatoes as a side were excellent. There is a small bar with a decent selection of draft beers. We will be back!

We DEFINITELY don't agree, but he wasn't argumentative! Was willing to actually converse without any rage on what we normally see between opposing parties!!! I will definitely be back, for the food, the fun and knowledgeable employees, and the smart (incorrect IN MY OPINION!!!), but INTELLIGENT conversation with someone I don't agree with, but enjoyed the exchange!!! Ordered the carnivore platter and burnt pork belly and was not expecting this. No where on the menu did it say it was pulled/chopped brisket. Was quite disappointed. Plus the links were subbed with some pork dish but was not communicated over the phone or at pick up. Got home and looked for the links and called the restaurant. The rep that picked up seemed annoyed and said EVERYTHING was there. If it was then we wouldn't have called in the first place. Pulled pork, brisket, and chicken was dry and lacked flavour. The ribs were soft but lacked flavour as well. Not worth the $109 we paid for. The rep that took my order was nice and very helpful. May have to think twice about giving this place another try.

This is now my favorite BBQ place in the Madison area. Friendly atmosphere, quick service, & a classic order window bbq joint. We had the smoked wings, pulled pork, chicken thigh, cheesy potatoes, & Mac & cheese.
The wings are top notch. Loved the cheesy potato’s, they were the first thing gone between the two of us. The sauces are all on the side & were very flavorful.
Only critique is that the hottest sauce wasn’t very spicy. Would love an option with some real kick.

I was really looking forward to visiting Primal Cue based on the great reviews that I had been seeing. I was torn on even writing this review as I am thrilled that we have another local restaurant option, and I want them to succeed, but everything about the visit was just, ok....and ok isn't good enough considering the high price. We visited on a Wednesday after work, and there were plenty of places to sit available. We were greeted when we came in and told it was counter service, to head to the window to order and that they would bring it out to us. First, not all items are available on all days. Ok, fair enough, smoker time on all these meats are different. So the options available were tri tip, sausage, chicken thighs, and ribs, which had an additional $5 upcharge, for only 3 ribs. The two meat plate was already $22, bringing it up to $27 for my plate. I'm a ribs fan so I had the ribs (3) and tri tip, ordered the mac and cheese and cole slaw for sides. The mac and cheese was very bland, mushy, and not much flavor, and the cole slaw was a bagged salad (the exact one I have purchased at the grocery store before) with no dressing on it, and just a small container of one of the creamy BBQ sauces to go on it I assumed. The tri tip was good and the ribs were fine (not sauced), but unfortunately nowhere near $27 good. My s.o. got a pulled pork sandwich which was dry, and drunken apples, and a baked potato, including an upcharge for butter on the potato. Add in a beer, and our check with a small tip(counter service again) was $69. If this was 'fantastic' BBQ, I would be happy to pay that...I've had that at other places in Madison. This was very average for a premium price. The staff we talked to were pleasant and helpful, so that was a plus. I will go back to try it again, as maybe I caught them on a bad night, but the things I found fault with seemed to be intentional decisions. After my visit, I'm just not sure what all the hype is about, unfortunately.

I have no clue why this places has a good rating. People must not have taste buds because all the food is bland. Ribs were fall off the bone and very dry + poorly seasoned. The Texas hot links tasted real cheap. Tri-tip was bland as well. I never rate places, but when I see how high of stars this place has, either something is up or people have no taste buds. Reminds me a two day left over BBQ you would see from a nursing home. I recommend not going here if you like flavor.

My daughter demanded that we leave this review. She had the French toast bake and she said it was amazing! She also said the bacon was also amazing and the hash browns they need a little more flavor. Our other daughter had the biscuits and gravy, she prefers that the biscuits are on the softer side but here these were crunchier but that's intentional because of the gravy. He also had bacon and hash browns and she said the bacon was perfectly crispy and the hash browns are a little spicy.
If the husband and I shared scramble and the breakfast sandwich, both were delicious, as well as the hot links.
We mainly stopped in for the smoke Bloody Mary which was top notch!

I stopped in for a to-go order for the first time since they first opened. I wasn’t particularly impressed then, and I’m not particularly impressed now. The first time the meats were dry, but I chalked it up to them expanding their business to add a physical location on top of their catering business. This time I purchased a two meat sampler plate and boy what a waste of money. I ordered the briskest and chicken thighs along with the cheesy potatoes and coleslaw. The meats were lukewarm at best. The brisket was quite flavorful, but I received only one small slice. The one chicken thigh I received was super dry and tasted like it was only grilled as opposed to being smoked. The potatoes were better as far as temperature and taste goes, but it felt like they were kinda rubbery. I can’t say anything good or bad about the coleslaw as it wasn’t quite the style coleslaw I normally like, but that certainly isn’t their fault. Overall, my biggest objection is I feel I didn’t get nearly enough for roughly $26 I spent after tax and tip. While a second thigh may not be warranted at least give a couple more slices of brisket. Compared to multiple other area BBQ joints portions are they are by far the stingiest.

Brisket was VERY juicy, the bark in it was excellent (would be a 10/10 if it had a bit more salt and pepper on it), the flavor was good but the sauces were actually incredible so definitely explore the sauces! Hot link was perfect!! They were out of ribs so have to save that for next time. Cinnamon apples are a pass, I'll be going for the mac-n-cheese next time. This was our first visit and most certainly not our last. Everything was amazing - the biscuits perfectly buttery with just the right crunch. The gravy was peppery, thick (but not too thick) and just the right amount of spice. The bagel was soft and fluffy, the bacon beautifully crispy. Also have to mention, these are great portions for the price!! You can’t tell from pictures how big the bagel was, but it was huge!

Had their carnivore platter and pork belly burnt ends and everything was delicious!! Our favorite sides were the baked beans and the cheesy potatoes. So lucky that we have this kind of legit Texas style BBQ right in Sun Prairie. I’m from the south so I’ve always complained about the lack of good southern style BBQ in Wisconsin, so this made me very happy to find. Keep it coming!!

I had carry out brisket and ribs. The sliced brisket fell apart as soon as I touched the fork to it. Tasted like pot roast. The ribs were really mushy and the bones fell out when I tried to cut it. The potatoes were good but the beans were rather pedestrian. Also they forgot the sauces I asked for but I was home before I found out. I so wanted to like them but I won’t be back. Sad

We've been to Primal 'Cue several times since moving to the area about 9 months ago as we both enjoy good bbq. My favorite is their ribs, and my wife really enjoys the brisket. The sausage and pulled pork both get an honorable mention. But, everything is very good. They have a nice, well-balanced choice of sauces to accompany the meat choices. All of the sides are very good also, with our favorites being the cornbread and the cold slaw. Today we stopped in for lunch, and greatly enjoyed the brisket grilled cheese sandwich. The two owners always make a point to stop by and visit with the customers, which goes a very long way to demonstrate their concern for the business and customer satisfaction. They frequently have some very nice specials at the bar, which is adjacent to the food area, but seems to operate separately for orders and billing. The prices are right in line with the quality of the food and overall experience. All in all, it's a great experience, and I definitely recommend Primal 'CUE!

I went for a fundraiser this evening. First time I've ever been to Primal Cue. And while the wait was long, every minute of waiting was well worth the wait.
The pulled pork was incredibly tender and juicy. The regular bbq sauce was delicious. The mac and cheese was creamy and cheesy. The cornbread was the best flavor I think I've ever had in a cornbread.
All of the staff was incredibly kind and apologized multiple times for the wait (which was mostly due to it being a fundraising night and there being just a plethora of people). I sat on the window sill in front of the counter while I waited and it was so fun to watch them all work and get the orders together. Job well done, guys. The owner was so incredibly kind and personable too.
I knew before I even ate the food that I was going to come back, but now after eating, I know for sure I will be. And even better, they were willing to help support a local family tonight.
10/10 Primal Cue. 10/10. 👏🏼

Wow were we blown away by this place. I’m disappointed we hadn’t gone sooner - we live close by and walked here. I have to admit, for the longest time I thought this was just a snack bar for the ice rink or something but I was definitely wrong. I wish we had found it sooner! The brisket, pulled pork, and chicken was outstanding. Everything was moist and well seasoned. There are a large variety of sides - the bourbon apples and mac and cheese were our favorites. They also have many different sauces to choose from. The pricing was reasonable, and you get a TON of food. We really liked that they served their coleslaw with the sauce on the side. No soggy or overdressed, mayo-y coleslaw to complain of!
What really set this restaurant apart from others was the service. The owner (or manager?) came to every table to check in on customers. The staff was friendly, attentive, and answered my (dumb) questions. We can’t wait to come back!

Wow! Amazing BBQ. Best chicken and shredded pork in the area. Both moist and flavorful. Brisket is excellent, too. Smoked links are a treat. Sides really stand out. Beans, cheesy potatoes, and Mac n cheese outstanding. Collard greens are a bit different from what I am used to. The food was delicious! We ordered a tri-tip sandwich plate with coleslaw and a full rack rib plate with the cheesy hash browns and cornbread. The ribs were falling off the bone and perfectly moist. The smoky flavor and rub tasted amazing with the Primal Cue sauce. The cheesy hash browns were fresh and had just the right amount of salt and cheese and whatever other good things they put in there. The coleslaw had a bit too much cauliflower for my husband's taste but he said it was still good. The only think I couldn't finish was the corn bread. The style is way drier than I would like but the honey butter helped with that. The service was quick and almost everyone was friendly and in good spirits. The food was so good I also forgot to take pictures! We would definitely go back and look forward to trying their specials!

80 people went through the line, some for seconds, and the food was SO GOOD that there wasn’t even anything left to take home! The guys loved it, seeing the stacked up plates of meat and sides that everybody got made me as happy as I could be! Truly thankful that we have a place like Primal Cue around this part of WI!
My favorite pieces had to be the chicken, it was the best chicken I’ve had in years and it even got me to order it when I went out to eat today with my fiancé! The service at the restaurant is superb, second to none that I’ve experienced in my year and a half living in the area!
I would also highly recommend the brisket burger, and I will say it ten times over that it was the best burger I’ve had in Wisconsin after trying many burger joints here in Madison. We will be back numerous times this year, and wanted again to shout out Andrew and the fellow Primal Cue teammates that assisted in such a successful catering event AND lunch with my fiancé!

Met one of the owner Andrew and spoke with him a while. The food was great, even the sides with many people know that alot of BBQ places do meat or side better. This was both. The Mrs had the brisket burger and loved it with the cheesy potatoes. I had the 2 meat platter that came with 2 sides. Brisket was perfect, the chicken was moist and had great flavor. For sides I chose mac and cheese and bourbon apples. Both well done as the mac and cheese isn't baked. Bourbon apples were sweet and balanced the whole plate. The honeybutter and cornbread went well with the meal too. Overall a great place and I will be back to try the ribs and smoked sausage.

We came for lunch and each had pulled pork sandwiches with two sides and water to drink. When the cashier said $48, I almost fell over.

Primal ‘Cue is a nice little spot, and super underrated! The St. Louis ribs are incredibly tender, a contender for the best BBQ in the Madison area.
The ribs are definitely the star of the show! The rib tips were fantastic as well. They fall right off the bone, are ridiculously juicy, and smoked to perfection. The sauce they use is perfectly balanced. Also, their mustard fields sauce is probably the best mustard-BBQ we’ve tried in the area.
They have different daily specials. The brisket burgers exceeded expectations by a landslide. A perfect char on the outside, juicy tender ground brisket inside- allover a perfect burger experience.
The tacos they have on Tuesdays were full of flavor. We do wish they had a brisket taco, as opposed to the ground brisket! The pork and chicken tacos definitely stole the show. They were great on flour and corn tortillas, really just depending on your mood. Delicious for a BBQ taco.
The nachos were a great snack to have with some drinks as well. The tacos were the star of the show here, though.
We previously had criticisms of their sides, specifically the mac, but we got it again and they improved it tenfold from the last time we tried it. Super cheesy, perfectly seasoned. Zero complaints about the bourbon apples! They’re the perfect baked apple craving. The bourbon creates such a unique flavor profile.
All in all, we are now regulars here! Fantastic place with fantastic service, and they love hearing feedback from their customers. Those ribs will have us coming back as long as they serve ‘em!

One of the best brunches that I have had in a long time. Phenomenal biscuits and gravy, delicious thick cut bacon, flavorful hot links and to top it all off some amazing bourbon apples! Their smokey blood Mary was my beverage of choice and was perfect with the meal. Others in my group had the bagel sandwich special and the pancakes which were equally good. I was hopeful, but it just wasn't worth the money. For $26 I got one small piece of brisket, one boneless chicken thigh, a small side of canned green beans, and a side of cheesy potatoes. The potatoes were the exact same kind your Great Aunt Sally brings to potlucks. There wasn't anything special about the green beans - they were straight out of the can. The flavor of the brisket was very good, but there wasn't very much of it. The sauces were also good. The two stars are for flavor alone.
My companion got a better deal. For $11 you can get 3 sliders with sides. However, if you order the coleslaw you have to construct it yourself. (They give you the sauce to put on the slaw veggies. This makes it a salad.) I understand trying to reduce food waste, but can't you just toss the individual portions as they're ordered?
Finally, I got an 8 oz pour of white wine. It was $15. It was a decent wine, but the price point was a surprise. I didn't come to a BBQ joint for exceptional wine. I came for exceptional food. And in that area, I was let down. Won't be back.

Good BBQ is not easy to find and is expensive typically with small portions.With that said I got the two meat plate with brisket and pork. I am pregnant and was able to share my food with my 5, 4, and 2 year old which my 5 and 2 year old eat like teenage boys and we still had some food left that's how large the portions were. Brisket was on point however I will say the pork had no smoke flavor and unfortunately was flavorless however the BBQ sauce corrected that issue. For our sides we got the bourbon apples and cheesy potatoes and they were so good. I would say the one downside is they only give you one of the BBQ sauces not all to try and the one they give you is the milder sweet one which isn't really my jam but it was still good. So make sure to ask specifically for the sauce you want. Owner walked around to check on everyone and was very friendly and welcoming. The only reason atmosphere got a 4 star from me is it gets crazy packed and the line to order runs right through the tables and makes it crammed and a little uncomfortable. But hey makes me happy that a business is doing so well to have a long line like that.

First time here, food was excellent. Wanted to try their brisket burger but was too tempted with the other options and went with a 2 meat meal instead. Cheesy hashbrows and mac and cheese for sides were both good. Texas hot links and chopped brisket both were great. Their signature BBQ sauce has a good taste, as was the hotter version of their signature bbq sauce, but not as hot as I would usually prefer.
Overall a great meal, and they have been added to my list of favorites that I will be back to.

I visited Primal 'Cue after hearing about it on the Madison Foodies Facebook group, and I'm glad I did! Upon entering, I was warmly greeted by one of the owners, who took the time to explain the ordering process and inform me about the available food options. Despite being wiped out of some choices due to a busy night before, the owner's kindness and welcoming attitude set a great tone for my experience.
I decided to order the tri-tip sandwich, mac and cheese, bourbon apples, and the primal sauce. The food arrived hot and fresh, and everything tasted fantastic. The mac and cheese was creamy and flavorful, while the bourbon apples were an absolute standout – they were incredibly delicious and a must-try for anyone visiting Primal 'Cue.
The tri-tip sandwich, although slightly smaller in portion size than I had hoped for, was still packed with great flavor. I wouldn't mind paying a bit extra for a more substantial serving of meat, but the quality and taste of the tri-tip were spot-on.
Overall, my experience at Primal 'Cue was excellent. The combination of friendly service, delicious food, and unique side dishes like the bourbon apples makes this spot highly recommendable. I will definitely be returning to try more of their meats and sides!

It was our first time trying Primal 'Cue and we can't wait to be back. Everyone was soooo nice - which goes a really long way with us. The food was great as well - and reasonably priced for bbq. We got, pulled pork, brisket and chicken with the discovering fire, mustard field and lightning strike sauces. We loved each sauce, but my favorite was the mustard field and my partner's favorite was the lightning strike. We had a nice chat with one of the owners, Tex. Super nice dude. Absolutely check this place out if you like good BBQ, good drinks and great people.

Our first time in this establishment, had no clue it was so amazing! We had ribs, pulled pork and the brisket burger...had to go back and get a full rack of ribs, they were The Best Ever in this customer's experience! Drinks are also available, good selection of beers. We will be back here as often as possible.

I had the ribs and beans and they were awesome! Ribs weren’t the fall off the bone like lots of people rave about…they had just enough chew with plenty of delicious flavor from the house made rub and a great smoke ring on them. Definitely will be going back to try the brisket very soon!🤤

Food knocked it outta the park!!!! We were there Sunday special- corn beef sandwich- OMG to damn good!!! Side was Mac n Cheese. The best I’ve had out!! Went with primal sauce… smoke flavor right amount of tang, it was right in every way. Both owners on site and interacting with customers- very very impressed!!! Great food great people- Can’t wait to go back!!

Amazing wings! Jumbo size, juicy, and super flavorful with the primal rub. Didn't need sauce but the sauce made them even better. Great place to watch the badgers play and the owners are both awesome!
