We came here for the first time in January and loved it. The waygu was melt in your mouth perfect. This time had more special effects which was fun and great, but took a star off as I feel quality of food was a bit lower. The waygu was chewy and subpar—surprising. Chef seemed overtired/was complaining about needing a vacation, and the word(?) “herbaceousness” was used to describe 4 different dishes. On a more positive note, you can tell he’s passionate about what he does. Loved the volcanic dish and dessert.

We hosted a private event here in June and had the most amazing and unique experience. We had a group of board members who just raved about how fun it was.
The employees were so knowledgeable and fun yet still very professional. We arrived later than I had communicated, and had a couple of other last-minute changes, and they handled it all with grace and excellence. We will definitely be returning!

This is an experience and not just a regular dinner - and that package is what garnered the 4 stars. Watching the dishes being made and hearing the stories makes this a more interactive and a learning experience. Each course also paired with a good selection of wines - both domestic and international. The space is small and cozy, at the back of Vom Fass retail. Staff is great - they make the experience complete. You can also grab your glass of wine and meander the shop; checking out all the oils and other libations. One downside is weak or no ventilation. Our eyes were watering from cooking smoke - we laughed it off despite it being a pet peeve. Our clothes smelled like grease and smoke the next day. Needless to say they need a good vent system. This is a higher end/cost experience. Great for special events. There is free parking right in front of it. Go, get smoked, laugh and enjoy it!

The team at DelecTable clearly love what they do, and relish sharing their passions with those of us fortunate enough to enjoy an evening there! I absolutely love the commitment to working with seasonal local food, and presenting it in fun and interesting ways. Dinner at DelecTable is almost meditatively wonderful, with the ability to truly *savor* each course. It seems like not only Chef Forster, but all the Chefs enjoy the experience, the sommelier Tyler along with the bartenders enjoy the challenge of finding perfect pairings, and the host Azul is so warm and welcoming, setting the tone for the evening from the moment you walk in. I love this place and the people and food are fantastic. Can't recommend enough.

Had an excellent night for my fiancé's birthday the sommelier was a cool customer with extensive knowledge of all spirits and directed me to some delicious rums. The old fashioned double up only heightened the experience.

It was a wonderful evening and a food adventure. It was so much fun learning about the food and drinks for each course. They made an absolutely scrumptious salmon since I could not eat the pork dish. I greatly enjoyed the cheese board and the dessert was so good. The thought and artistry that went into each Mocktail was greatly appreciated since I was choosing not to drink that night. Staff & Chef's
Warm and welcoming. Fun and interactive. Hard working. Attentive. Consistent. I could spend an entire review talking them up.

Food
Changes seasonally. We try to go each season for a brand new experience each time. There is always something unique and delicious. You will not go home hungry. Most times you will not go home overly stuffed.

Pacing
This is a dining experience and does take time and they do it seamlessly. The hours spent always seem to fly by. Intermission is a nice chance to reset, move, and sample the amazing selection of wine, oils, vinegars, and liquors vom Fass has to offer.

Wine
Parings are always spot on. We usually leave with a bottle of a new favorite wine.

N/A Pairings
Sober curious? The zero proof pairings are not matched anywhere! The bartender's have an arsenal to work with and I do not feel like I'm missing out by not getting the wine paring.

Even though I attended the 5 course Thursday, the menu offered options from elevated comfort food (citrus mashed potatoes) to adventurous (perfectly prepared octopus). Everything was amazing from beginning to end! It was incredible to watch the chefs prepare each course, describe the ingredients, and then the sommelier talk about the wine pairing. All of the servers were wonderful, and well orchestrated.

Honestly what made it over the top for us was the mocktail pairings. My mom and I both don't drink any longer, and miss being able to pair wines and cocktails with our meals. Having the opportunity to experience extremely unique and delicious mocktails with our incredible meal was brilliant!!

Very unique and fine dining experience. This 8-10 course meal is exquisite. Five star service for sure, you definitely get what you paid for. About 3 hours with each course expertly paired with a cocktail, mocktail or wine that is then explained during each course. Love the fact that they have a whole mocktail menu that directly replicates the normal cocktails to make us feel included. I brought my 13 year old sister with me and didn’t want to drink with her with me. It was nice she was able to enjoy it just as much as everyone else. With that being said, she is 13 and her palate was definitely not enhanced enough for this meal. Very unique, delicious and sophisticated flavors. I really loved the blindfold course, leaving you discover what’s on your plate through your other senses. I loved almost every thing and plan on coming back.

A unique and elaborate culinary experience that will have your taste buds and your belly more than satisfied! Come spend an evening out experiencing fancy and flavorful foods and spice combinations that most likely are new to you! All the food is made in house using local farm fresh ingredients on a custom 8 course menu that is created to fit the fresh local ingredients! Chef Ben is both a delight and extremely talented along with Tyler the Alchemist who artfully matches drinks to your dining experience! The atmosphere is cozy, fancy, and you get to watch the Chef's work, cook, and artfully plate your food.

There are 3 tiers of experience all at at different cost: Chef's table which is the most expensive where you are at the table they are preparing the food and can chat with them, General seating which you can see the chef make the food on the TVs, and bar seating which is the most affordable but hey the bar tenders are right there!

I went here for a big birthday of mine and wow did they make it special. They left me a cute little card saying happy birthday and I left with a gift wrapped mini bottle of an olive oil from their store Vom Foss.

Last night my husband & I went to DelecTable for the first time. What were we waiting for?! We shop at Vom Fass & each time are reminded of the restaurant…& promptly do nothing about it because I’m terrible at planning ahead. We sat at the chef’s table because I like to be as close as possible to whatever is going on. The evening was flawless. Attentive service & Chef Ben & his crew were delightful to watch…calm & precise. Chef introduced each course & he let us know what farm each ingredient came from, who the farmers are, & where they are located…my kind of place. Local is important to me & that is how I cook at home. I have relationships with the people who grow & raise my food. Chef Ben’s passion about what he does was evident & he answered our questions with ease. The food was creative, challenging, & showcased the best of what Wisconsin has to offer right now. Each dish surprised my taste buds & made me think…does this belong here? Do these ingredients go together? Wow, that’s aggressive! And yes, in the end…it all settled in & made sense. This is not your grandmother’s cooking. And I like that. Sometimes good food just is…& other times it’s like art & opens your mind to new possibilities. I usually have an easy time picking favorites…but not with this menu…I’d gleefully eat it all over again. What made me happiest was that I was served things I’m not a huge fan of (bitter greens, chicken breast, sous vide protein)…& they worked! I will immediately send back a piece of meat that is sous vide…I HATE the texture & no one seems able to hide it. Chef Ben sous vide the chicken breast in butter…& oh, my…it was luscious. Parsnips 3 ways included a crispy peel…using the whole vegetable. Many dishes featured my love language…sweet & savory. The standout ingredient of the night for me…Zatar spiced compressed Metiki dark cucumber…those few zesty bites made the lamb sing…it was the only thing I wish I had more of. My Mad Apple Mule featured apple cider that had been pressed that morning…& tasted like autumn in a glass. The meal was incredible & I am eager to return.

A really lovely date experience for my husband and I, with a focus on seasonal and locally sourced food.

The non-alcoholic meal pairing was especially notable. Each course came with a beautiful mockcocktail, thoughtfully prepared and well matched to the course. If you have any doubts about whether it is worth paying as much for the mocktail pairings as for the wine pairings: it absolutely is. The amount of care and time that went into each drink was worth it.

First time eating here and what a great dining experience in Madison!

Located in Hilldale area with plenty of free parking. The concept is an open layout kitchen serving 8-10 courses which vary depending on what local ingredients are available that season. They also only do dinner service with the seating beginning at 6:00 PM.

Cost breakdown:
A $20/person deposit and $8 booking fee is required to make a reservation!

$120/person + 20% service charge for bar seating at the table where the chef prepares food. Only advantage is it's easier to chat with the chef during the experience. This price is without wine pairing.

$99/person + 20% service charge for general table seating. I sat here and still had a view of the chefs plating food. If I return I would pick this seating again.

Food:
The food is locally sourced, well presented, and tasted great. I especially enjoyed the blindfold course where you wear a blindfold as the waitstaff bring out the food so you do not know what you are eating.
As each course is brought out, chef Ben explains the ingredients of each dish and where they were sourced from.

There was an intermission of about 15-20 minutes where you could stretch your legs or enjoy complimentary samples of whiskey, oil, and other condiments. Another Yelp review mentioned the intermission was 45 minutes which concerned us initially, but ours wasn't that long.

All of the waitstaff and chefs were super friendly and attentive. My only criticisms are that I was there celebrating a birthday and the birthday cake they provided was very basic, especially for a place charging $100+/person and the experience was 3.5 hours which is quite long for 8 courses!

I was there for a 5-course dinner, as part of a “ladies’ night out”. The food was absolutely exquisite! The chefs introduced each course, giving the background of where the ingredients were sourced, and giving their own ideas that went into each recipe. Staff was super friendly and responsive with pre-dinner drink orders, and throughout dinner, replacing silverware with each course, and asking how everything tastes. If you want to feel pampered, come to Delectable and become immersed in a fun and different-from-the-norm experience!

Pros: Chef Joel was very knowledgeable and also really entertaining. The cocktails were amazing, and the food and ambiance were nice too! The owner, Justin, went above and beyond to ensure everyone had a wonderful experience.

CON: There were so many people in Joel's class that we didn't even get a chance to touch a single ingredient. We've been to a bunch of cooking classes, but this was the only one where we didn't actually get to, well, cook! Chef Kevin's classes were smaller, but still only a couple of people there got to touch the food.

I think this is a cool experience if you simply want a slightly more involved experience than going to a restaurant. But if you are a foodie that wants to learn some new cooking techniques, you might leave disappointed.

This is a difficult review to write. I really wanted Delectable to live up to fine dining standards however it fell short in major ways. *New Years Eve Menu Review*

The positives: Meat and vegetables were very well sourced. They are cooking with fresh and quality ingredients. Most meat and vegetables were properly cooked. The waiters were polite and served us in a timely manner.

~ Pork Tenderloin with cherry sauce and sousvide sweet potato with sautéed kale and kale chip. The best executed and conceptual dish of the night. The sautéed kale brought great acidity with they cherry. The tenderloin was perfectly cooked. The kale chip added a nice salty crunch. Loved this.

The negatives: Dish conceptualization was some of the worst I've ever seen, even compared to a mid tier restaurant. Portion sizing was erratic and seasoning inconsistent.
~ Lobster tail deep fried, covered in hollandaise, then put on a poached pear compote. Lobster is a sweet delicate morsel that doesn't need to be covered up and accented with more sweetness. The dish severely lacked acid and I ended up eating the lobster by itself.
~ U10 Bay Scallop on pommes purees with a mushroom gravy. Why are you taking one of the best scallops and putting it with a heavy gravy and potatoes? You can't even taste the scallop.
I ate the scallop alone and enjoyed the pommes purees and mushroom gravy on there own. Again another seafood item served without citrus. Potato's were chunky which isn't how pommes purees is served.
~ Foie gras torchon with apricot ice cream on whipped honey. I gagged eating this. The whipped honey was SO STRONG you could barely taste anything other than honey and apricot ice cream. Only tasting notes are sweet and a tiny bit sour. The bread was stale and the torchon was seasoned in maple syrup (more sweet). I honestly don't believe they ever tasted this themselves and I can't fathom what there intention was.
~ Wagyu Beef - This was cooked medium well and the fat on the sides wasn't rendered. A tragic waste of such a beautiful cut of meat. It was under seasoned and the portions were inconsistent.
~ Waffle with Caviar and crème fraiche- Would have been interesting except it was drowned in maple syrup.
~Rose Trifle - It was 70% gelatin... fill the inside with a mousse next time and put a thin layer of gelatin to get the globe look. It will be more texturally interesting and more pleasant to eat.

A wait staff member did a fire show at the end and he seemed very annoyed to be doing it. There was no introduction to it happening and was just a weird random event. Fire shows don't have a place at a fine dining restaurant.

Cocktails were unsurprisingly far too sweet.

The cost of the event doesn't excuse the glaring problems in the menu and execution of the dishes. I'm surprised to see such positive reviews on google as our dinner was laughably bad. Luckily the money is going to well sourced products which ended up being the highlight for me.

I dont say this lightly, since I love and respect a lot of the restaurants in Madison, but this is the best culinary experience I had in Madison. Ever. Will not be surprised if this place gets a Michelin star.
Service is top level. Very attentive staff.
The cocktails are fantastic- loved the wine-based old fashioned and the Manhattan was delicious.
Food was delicious and sourced locally- delicious meat and cheeses as well as vegetables and other ingredients.
Lastly, the presentation with the chef explaining the food before each meal was very engaging.
Overall, a great experience.
Oh, and almost forgot- the restaurant also has a store that sells delicious top-level wines and liquors.

It’s a rare treat to be cooked an 8 course meal composed of wonderful local foods, paired perfectly with carefully selected wines at every stage. It’s rarer still to have the same experience with hand crafted mocktails that may actually be preferable to the wine. Tyler is an amazing flavor-wizard behind the bar. It’s worth stopping in just to sample his talent.

DelecTable is a wonderful and unique gem in Madison’s dining crown. We received a guided tour of the courses and their ingredients by our master chef, with wonderful, provoking, memory inducing flavors in every course. “Smoked hay and almond ice cream with peach blueberry galette”. It invoked pie around an evening campfire when I was seven, taking me back to the simplicity of early youth. We went home perfectly sober, and slept well waking up to a good day with no hangover. Absolutely wonderful experience! The entire setup is meant to give you time to properly enjoy the food, the drinks, and the atmosphere and is done with such elegance it makes a truly engaging evening.

There isn't much to say about the food except it's exactly what you'd want it to be - creative quality dishes within a fun theme (ours was "culinary casual") with chefs who really seem to enjoy what they do. High praise to all of them for not only cooking tasty dishes but giving a fun night to go with it.

Highlights include a Mocktail menu for those that want to skip the alcohol that are as good (if not better) than some of the wine pairings, unique collections of wine suited to the dishes with thought and care, and a fun host who adds some additional story to everything they put together.

Don't be thrown by the price - it is worth every penny and then some.

For the food allergy crowd - they take great care to ensure all dietary restrictions are followed without losing on the experience. The night we went they had a vegan and it was actually really fun to see the creative options they put together!

The people here are amazing, really pleasant experience with lots of surprise! All the vegetables taste so good, and we really appreciate how they designed beautiful dishes with all theses simple but nice ingredients. I don’t drink much, but I highly recommend the wine pairing - it adds just the right amount of contrast to keep you interested. Personally one thing not to my liking is the stuffed pork trotter, which has a loose and foamy texture inside and soft-sticky skins outside. It’s nicely made but I feel a little bored, and perhaps mixing with some chewy or crispy texture will taste better.

We took two cooking classes here. We did not have a dine-in Chef's table dinner so this review is not about the dinner.
The perfect: The bartender is amazing and the drinks are great, 10/10.
The good: The staff is incredibly friendly and very positive. Almost everything on the menu is something you or someone else actually makes in class.
The bad: The classes have too many people in them and so the kitchen is VERY cramped with the number of students. We took two classes, a Crepes one that was not fun and a Hanoi cuisine class that was much better but still flawed. There is only one instructor with no helpers, saying it is disorganized is an understatement. You may only participate in making 1 of the dishes for the class and your participation might just be cracking and frying 24 eggs. In both classes it felt like 15-30 minutes after we were done cooking before we ate and at that point all of the food tastes like old takeout (especially crepes). Students burning things, asking for utensils, not having the right equipment while the chef runs around and tries to get the next thing ready. The classes feel like 16 people who are bad line cooks in a kitchen and the only person who knows what's going on is the instructor. Our entire class shared one turner and two knives.

Suggestions: Get two floating kitchen islands and put them in the center of the room so students can do non-cooking prep work away from the main cooking station. Have at least 1 helper in the class in addition to the chef making sure things are moving along and that students are doing the right thing. Put a mirror above the doors to the class area facing the chef so that the chef can see what's on the TV screens instead of asking 100x during the class if we can see what he's doing.

Valentines day plans had fallen through and we weren't sure how to salvage the situation, but luck was with us this year as we managed to get through the wait-list and into this restaurant experience at the last second. Let me tell you, this was one of the singular best experiences I have had in my life.
You walk in and you're greeted by an odd looking shop with a gracious host. You get taken back into a proper restaurant and realize that you're about to get a very intimate dining experience. You order a cocktail and realize the night is already off to an excellent start as you take your extra time to peruse the odd looking shop and realize they have everything in all the flavors you love. After the first course is over you realize that you really should have joined the loyalty club in the way in and you're probably going to spend some money in the front shop too. The courses surprise and delight you. You make some compliments you can't take back, nor do you want to. There's a surprise. Then you leave and wonder what special occasion you'll use as an excuse to come back.

We did a cooking class with Chef Joel and had a wonderful time. Joel was a delight (as well as all the other staff—Betty, Jake, and Jen)! Everyone was friendly and helpful. There’s also a bar with a great selection of wine and fun cocktails. It was a super simple set up and the food was amazing, and it’s such a fun community vibe where you all make the food together and enjoy your work together. There’s something for everyone. I’m not much of a cook and I was able to keep up and my mom (who is a heck of a cook) even learned some new things herself. I would absolutely go again and recommend it to my friends.

My Fiancé and I celebrated our two year anniversary here. We experienced a dual between two talented chefs, we were able to vote the best appetizer, main dish and dessert. We had a fun time. The vibe when you arrive there is jovial, with an undercurrent of excitement for the dinner “performance.” No visit is complete without one of Hudson’s or Gabe’s pre-dinner premium cocktails. The menu for Modern Indulgence was one of our favorites, but be warned, we tend to say that with every DelecTable experience. Each of the five courses and wine pairings delighted our taste buds. Chef Drew, once again provided a superb culinary experience. Sommelier Hudson took us on a verbal “tour” of each wine’s origins and educated our palates with his extensive knowledge of wines of the world. Justin Gibson, owner of Vom Fass/DelecTable was, as always, the consummate host. We give this venue our highest recommendation!

delecTable is AMAZING. The idea is innovative and fresh and the experience was wonderful. Located in the back of Vom-Fass, there is ample parking (though if you're here for dinner + wine pairing, I might hang up the keys and find an alternative mode of transportation). Be prepared to socialize and chat if you're going as a pair, since you'll be seated with another couple.

We went during the Early Spring Harvest dinner (spring harvest salad, morel risotto, halibut, New York strip, blackberry granita/sorbet).

It was a wonderful experience and I would say that the wine pairing with each course is more than generous (we couldn't keep up!). I loved hearing the story and inspiration behind each dish, which allowed me to appreciate and enjoy the flavors better. I know that each dinner theatre is different and it is a rotation of chefs, so I am intentionally keeping this review vague since chances are, you won't be having the same thing I had. There was an intermission in between for you to get up, stretch your legs and go to the main store to purchase items and continue with tastings, which I appreciated.

The bonus is everything is paid up front (the price includes tax and tip) so you can sit back and relax and at the end of your meal, get up and leave without having to do the dance. Be prepared to spend a whole evening here. I would definitely recommend swinging by if you're in the Madison area to try this out!
