We hosted my son’s rehearsal dinner and a welcome party in The Venue room at Pilot Project. From our first visit there when shopping for a location, they were at the very top of our list and no one came close after that.
Erin was a rock star with helping us organize and manage the evening. Vania was on site all evening and never far away if we had a question or needed anything. Tiny issue with a food allergy that they remedied the day before our event and made everyone happy.
It was a 5 star experience from beginning to end and helped make the weekend a roaring success!

This was a good time. I came in as soon as they opened on Friday when I got into town. Food was tasty, I did the fish fry. The slaw was not an afterthought like lost places. I enjoyed it. Fries were good though a bit salty in some cases. Fish was nicely fried and not overcooked. Beers were bangers. The raven was really good and I consider myself a beer snob. It seems folks love the wings here. I considered taking some back to my room. Would definitely come back for the beers alone.

We hosted an event for about 100 people on the rooftop at Pilot Project and had a fantastic experience. Kristi was incredible in helping us coordinate all the logistics - from clear, timely communication to curating a menu that accommodated a wide range of dietary needs. I’ve been meaning to write this review as I stopped in a couple weeks ago with some coworkers. What a great concept this place is! The building was super unique, and we even got to go on a really cool tour with Bob to explore more of it! Bob was very funny and knowledgeable about the history and process of making beer, and showing us the machines to can them was awesome. Bob had us try a bunch of different beers and gave us the history about the creators and how their beer came to be part of pilot brewing. On top of that, this place has one of the best rooftop bar experience in Milwaukee! Very cool place I will definitely be back to enjoy the beer on the rooftop, and listen to Bob’s funny jokes!

Very "hip" place. Good selection of beers, hitting the usual selection of ipa's, sours, etc. The marzen offering was quite good, but I am partial to octoberfests. I think the baked pretzel came out of the fridge, but was tasty with a good selection of dips. Cool, laid back vibe. Very open and airy. A patio and green space bags field rounds out an indoor section with a lot of plants.

We just had our wedding celebration this past weekend. Could not have asked for the day/night to go any better than it did. Kristi from Pilot project was amazing!! Could not say enough good things about her-everything from being responsive leading up to the day and being very present during the day and night. My husband and I love tacos and despite them not actually being on the menu- they made it happen! And they were delicious. Our guests gave so many compliments about the food. Lastly, the bartenders were great!! Highly recommend pilot project for big events.

What an awesome find in downtown Milwaukee!! Went with a group and took the tour - such a fun experience!! Our tour guide, Bob was friendly, knowledgeable & just exuded a great energy. We were able to try several different kinds of beverages - all of them super unique. The brewery itself was really interesting, but it's also a bar/restaurant with an additional rooftop bar which really rounded out the experience. The views from up there were incredible! Paired with some great food & drink and nearing sunset - was just a really great vibe!! Will definitely be back!

We just held our wedding here at Pilot Project this past weekend and everything went very smoothly! I worked with Libby for majority of the wedding planning and she was lovely. Very responsive to all my emails, answered all my questions honestly, and checked in with us/our coordinators to make sure the day was going as planned. We heard only great things about the food and service from our guests. We had about 200 guests and there was plenty of space for everyone on the rooftop for cocktail hour and in the venue/beer hall space. We did not have the entire brewery rented out as the barrel room/mezzanine remained open to the public. I honestly thought I would interact with the "public" more than I did. They did an amazing job of making sure no one entered our space and there was a clear separation between everyone. The brewery was still packed with people also, so goes to show they did a great job still supporting the public and making sure their experience was great as well!

Blimey! 😊 I popped into Pilot Project Brewing in Milwaukee for a spot of grub and a pint, and it was a cracking good time 👍. The Italian street food was spot on 🍝👌, and the craft beers were bloody lovely 🍺👍. The rooftop bar had some fantastic views of the city 🌆, and it was a top spot to chill with mates 👫.

The atmosphere was quite relaxed and welcoming, innit? 😎 The staff were friendly and attentive, and I felt right at home 🏠. The only reason I'm not giving it a full 5 stars is that the food could do with a bit more authenticity 🤔, but all in all, it's a top spot to visit 👍.

If you're in Milwaukee and looking for a place to grab a bite and a pint, Pilot Project Brewing is a cracking good choice 👌. Give it a go, mate! 🤜🤛 Cheers!

Historical curb appeal meets modern tap room. The vibe is modern and relaxed, with historic views in the front and modern city digs in the back. We didn’t get a chance to experience the roof top patio, but will definitely be back to experience it. Huge plus as always: it’s dog friendly! The patio and front area inside are perfect for bringing the gang.

The drink selection is always changing in the best way — fun, creative brews that are actually good. The Strawberry White Pepper Margarita by Devious was the perfect summer cocktail. It’s just one of those places where you show up for a drink and end up staying way longer than you meant to (in the best way).

I feel like there's always a shortage of Milwaukee eateries located in beautiful modern buildings. We came here after a long hot day of schlepping around town and came out of it cool, refreshed and happy. The food is ON POINT (see picture). Our server was pretty inattentive and somehow never around when we needed her at a time that wasn't busy. Oh well. We stopped by Pilot Project for brunch and had an awesome experience! The food was honestly fantastic — definitely exceeded expectations. The build your own Bloody Mary bar is such a fun touch and not something you see often in the city.

A huge shoutout to Willow, Shauna, and Reagan — all three were incredibly friendly, welcoming, and attentive throughout our visit. You can tell they care about creating a great experience for everyone.

The real project at pilot project is the service. Whichever two bartenders were on the rooftop on the 28th of June 2025 from 8-10pm were the worst possible bartenders ever! The rooftop was very slow this evening with the actual bar top more than half empty yet it took 10+ minutes to get any sort of recondition. No “We will be with you shortly” not even any eye contact. The bartenders were too busy frolicking off in La La land to do the one thing they got hired to do… tend the bar.

I will say everyone who was downstairs tonight was absolutely lovely and matched the levels of service you would expect from tip based profession.

Frankly I’m just disappointed in the complete lack of care that was upheld tonight. The rest of the place was lovely but after an experience like that I question how much I really care to go back.

Stopped in to Pilot Project after a wonderful Friday spent at Bradford Beach. The location of the brewery is somewhat off-putting, tucked in a corner of downtown that's isolated from the other major entertainment hubs and with only street parking. As we approached, we were struck by how beautiful, and empty, the outdoor beer garden was. Not a good sign on a Friday in MKE. After being seated, our waitress showed up a few minutes later to take a drink and food order. After dropping off our beers, she dropped off the map. Food runners brought our meals, but they didnt bother to bring side plates, napkins or utensils for anything. I had to mosey around looking for our server to get these items and our primary food order taken. The rest of the meal was mediocre at best. The "smash burgers" arent really smash burgers, just poorly cooked patties with cheese. The waffle fries are salty and of the cheap, restaurant wholesale quality. My sons burger was missing toppings requested and when he brought it up, the waitress just stared uncomfortably while insisting onions were on the burger as he paged through the bun and patties on a scavenger hunt that failed to produce onions. No offer to just go and bring some sliced raw onions, she just walked off. LOL. $17 - $20 for subpar burgers and even more suspect service? The beer was fine and the wings were good but this brewery has a lot of work to do if it thinks it can compete with the other, quality options in the greater Milwaukee area. As we live outside of the city and had come to downtown specifically for the beach and to try a new brewery, there's nothing at Pilot Project that would attract us to return a second time.

We went for our anniversary dinner and had a wonderful time. We were seeing a local show at the Riverside and it was a reasonably convenient stop. The food was fantastic we had appetizers and shared our main. Reagan was the manager on staff and was extremely friendly and had great information about the whole restaurant and brewing room.

It’s a nice location, food is okay but somewhat bland. Don’t request information on hosting an event here. It’s a big facility so they’ll try and sell you event packages for 100+ people with $5,000-$8,000 food and beverage minimums. It’s a Chicago owned brewery so they’re absolutely pricing as if it’s in downtown Chicago, when Milwaukee market prices are much cheaper.

I was working with Libby who is an event salesperson. I asked if there were other options as I had a smaller event that wouldn't be able to meet a $5,000 minimum and I received back a rude “per my last email” type reply. We all know what per my last email means… I won’t be hosting or going back here due to how I was treated.

We decided to travel to Milwaukee, and we saw that the Pilot Project brewery was doing tours of the facilities, and we decided to take a tour, since we had never done one before. Our tour guide, Olivia, was great. She did a good job of balancing information with engaging jokes and was very knowledgeable. The tickets were $16/pp and included five tastings, and three $5 pours at the bar after the tour (per person). Pilot Project has a unique take on the brewing scene, giving a space to smaller brewers to have their start, and market their product(s) to a wide audience. We enjoyed learning about the stories of these different brewers and how Pilot Project came to be what it is today.

I thought it was a great deal for the price of the tickets, and the experience overall was great. I will definitely be telling my friends about Pilot Project, and if I am in Milwaukee again, this will be on the top of my list of things to do.

We booked a party with Pilot Project MKE, and they worked with us to recreate dishes to suit our guests of honors’ dietary needs. Then, when things fell apart at the very last minute, they went out of their way to take care of the few of us who had put so much time into organizing the event. I walked into the sunny open and inviting dining room to find Shauna amidst the glorious illumination of the bar. We ordered the best flight of bottomless mimosas one could ever wish to receive, cheese curds that were a steps above the rest and eggs & bacon, that was straight off the hogs back and deliciously candied. My group of guys and I celebrated a birthday at Project Pilot Brewing, and the whole experience was solid. They had our reserved table ready to go when we arrived, and the atmosphere was really nice—open layout, high ceilings, and big skylights that give the place an airy, relaxed vibe.

We had a large group during a very crowded time.
The beers are among the best I have ever had. The Two Falls Hazy IPA was outstanding.
The food was great. Had a variety of appetizers that were all delicious.
But what really stands out is the service. Everyone we dealt with from the hostess to the bartenders to the servers all went above and beyond on a very challenging day. Cannot speak highly enough about the staff

We’ve been to Pilot many times, and it’s always a great experience! The poke nachos and Napa salad are our current favorites, and you can never go wrong with the wings and curds. The service and staff are top-notch—friendly, professional, and always accommodating. A few weeks ago, we had a last-minute change to our reservation, and they handled it with grace and ease. Eight of us from our beer club in Tosa decided to do an outing and chose Pilot Project. We decided to come here because of flights and food.

The cheese curds were great to start with and we all picked a beer or the flight we all agreed upon to start. The idea was to all taste the same four and vote on the best. We chose:

Woo Wap Da Bam
Ventana — 2nd place
Obex — 3rd place
Black is Beautiful — 1st place

We ate dinner while we tasted our beers.
The food varied between us all, and each looked and tasted great:

A few Smash Burgers
Steak Sandwich
Fried Chicken Sando (could of used more aioli)
Smoked Brisket
A.B.L.T.

I had a Caesar salad for $24 and one drink. Total was $41 not including tip.

Now, I don’t know who would read the add avocado, bacon, chicken as being $4 for each.

Adding a simple “or” between the avocado, bacon, and chicken would make it more clear.

The menu was misleading and I feel like I was over charged for the amount I got.

I attend a book event here and I can say the front of house is fantastic. I love a place that will start a tab and will give me my card back- little but important. Along with a few drinks- the food was great. The kitchen had a slip up, but the front of house was amazing and made it right immediately. I can’t wait to bring other friends, because if they can be this good when things are a little off, I know it will be even better next time!

I went here alone on New Years Day because it was recommended online. I’m glad I went! Had an amazing Bloody Mary and also a flight of beers. (Try the Pickle Beer, it’s amazing!) Then I tried a chicken sandwich with a Caesar Salad. Perfect vibe for New Year’s Day.

Great place for unique food & plenty of brews! The service was quick, accommodating, and efficient. The waitstaff floated around frequently, always asking to refill beverages. The food, while unique & constantly changing, was delicious. Pilot Project is cranking out some mouthwatering wings. I ordered the Asian sweet and sour wings! Every bite was sweet and intensely flavorful.
Pilot is very reasonably priced, so you don't feel like you're draining your wallet!

This place is outstanding . Fyi when the server says the appetizers are big shes not joking . Fried pickles was a full platter. Cheese curds where on a full platter and the pretzel was a platter size. Cant even finish my smash burger I'm so full with the family . Cool incubator focused brewery ... Great place to sample micro brews. Atmosphere is super cool - urban chic - with full glass windows so you can see the inner workings of the brewery. They also have bar games on a patio (dog friendly) and also a rooftop patio!

We did a tour here and it was great! Brandon our tour guide was super knowledgeable and had an awesome sense of humor; plus was down to go “off book” and chitchat about what we were curious out. He also gave some good recommendations about what to try when we were back at the bar — my boyfriend had a pickle beer that he loved and I really enjoyed the hard kombucha they served. The tour was also accommodating of nonalcoholic guests. Pilot as a concept is super unique and means that you can try a lot of different beers at once, while supporting local small businesses!

Very cool atmosphere. Our tour guide Brandon was extremely engaging, fun, and knowledgeable throughout the brewery tour. HOWEVER, after the tour when we were sat for our dinner reservation, we were greeted by a rude and dismissive waiter named Peter. It was an extremely disappointing experience, especially after we were paying customers of the brewery tour with a group of 12. We were haphazardly greeted by this individual and were rushed to put in food orders as soon as we sat down. Every question we asked was met with an annoyed, curt response and he seemed pained to have to serve our group. Due to the disrespect from the waiter, we chose to cancel our food order and leave the establishment.

Highly recommend for the brewery tour - ask for Brandon. He’s awesome.
Highly DO NOT recommend for restaurant service.

Is this place a brewery? Honest question. I logged my beer in untapped, and realized it was another brewery's. Looking at the list, that seems to be the case for 90% of it. But then there's 2 or 3 that say pilot project? Food prices are outrageous. Maybe in
downtown Chicago, $16 for apps is ok, but not here. Also, we were at a dog thing in the deer district and wandered over to try their beer. No dogs allowed inside, and no flights outside. So I got a wit, but 2/3 in, it was warm. All in all, I admit this was a subpar experience and not the best they can offer. But with so many othe/r options, im not sure ill be back.

We had the most beautiful baby shower at the brewery - in the venue room. It was so much fun! One last Brew before the baby was due! The staff was so accommodating on the event day; which made set up stress-free! The planning process was a breeze with the assistance of Mary, who was always very responsive. The food and the beer, the NA Beer was so good! They even brought in special-sized pretzels for the event because I had a vision. We got so many compliments from our guests on everything. But the best part of all was watching the parents-to-be get to relax and mingle with so many people who love them.

The beer here is excellent, as is the Bolognese pasta dish. The Rueben sandwich was quite good, and almost excellent. The bread was very substantial as it should be, and the ingredients were balanced just right. But there should have been more meat. The French fries were terrible and should be immediately replaced. And they actually chareged me $2.00 more as a side. The place just didn't justify the costs of the entrees.

Hands down the worst brewery I've been to in Milwaukee. No joke. Took a chance on the bar keeps choice for a flight. My bad, should have figured it would have been the worst of the worst. And the Barvarian Pretzel wasn't all that bad, but the dipping sauces had a layer of film on the top, along with the clearly microwaved cheese having something black floating in the cheese sauce. Just saying, was expecting nothing great, and was still extremely disappointed! It may look good, but I assure you, you will have better at your local watering hole. Stay away from ALL the Kambucha, and the hazy IPA with Yauza, is a hard pass for me... Sorry to the Proprietors. This ain't my cup o tea...

Warning! Bring long sleeves if you plan to sit inside. The A/C is freezing, and they claim to not have control over it (update, it was also drafty in the winter months and I had 2 long sleeves on). This is the only reason I did not rank it a 5 star establishment. The variety of craft beer is great. The fried pickles were good, but I wish there was more of a pickle ratio compared to the batter. The meatball sub was messy but good. I want to try everything on the menu! Besides it being chilly, the atmosphere is great. Trendy location with a pet friendly patio as well as a rooftop bar (if it isn't reserved for a private party). I would highly recommend trying out this brewery/restaurant!

Another update: we went back to try more food. Nobody in our group loved their food. The mushroom melt was not on the bread described on the menu, and it was too salty. The dry rub wings were way too salty. Finally, the "rosemary" fries had no flavor besides salt. I will not be going back for food again, but I would still recommend people try out the great beers on tap!

After having enjoyed the Chicago location more than nice, we were excited to try this new, larger facility in Milwaukee. We were heading to an event at the Fiserv and has about 1.5 hours. We ordered our beers and they asked if we wanted food. After ordering, 40 mins went by… no food. Despite asking if we were “ok” at first by many folks, it got kind of quiet and once we heard “thanks for your patience” to the folks near us, we decided to ask. We were told it would be another 25 mins because they were suddenly busy (half the tables were empty). I understand there was an event and likely more people than expected, that’s not why I’m rating low. I’m rating low because NO ONE warned us when we ordered. NO ONE offered up a time we had to ask. Thankfully we were able to cancel the order and leave. But the beers were good I guess
