Apparently this is one of those places where if you don't leave a to-go order tip when ordering online they conveniently lose your order and you have to wait 45 minutes when you get there. Never again.

the handmade noodles are fresh, soft, and chewy and the beef is the perfect texture and size. every bite is balanced and flavorful. portions are generous and make for amazing leftovers! the dumplings are also juicy and packed with yummy veggies and fresh flavor. best handmade noodles i’ve had in town!
Edit: I met the owner—she is the loveliest lady! Love supporting small businesses that have a good heart.

I really enjoyed this restaurant. I’ve been trying to find a good Chinese restaurant for quite some time and haven’t had luck. The food here tasted incredibly fresh and flavorful. I had the Chicken Noodles and it’s exactly what I’ve been wanting. My partner had the Orange Chicken with noodles and he said it was really good quality chicken, but could use some vegetables on the side. The noodles could also use some seasoning as the orange chicken sauce wasn’t enough to cover them. Everyone was really attentive, and helpful. Great place!

We ordered 3 dishes & 2 appetizers. Loved the scallion pancakes, vegetarian spring rolls, Cashew Chicken, Spicy sour beef noodles & Mapo tofu with broccoli and sesame balls for desert. Very generous serving sizes of everything. Very delicious food, helpful & friendly staff. We went just after they opened at 4 pm Sunday & we had our pick of tables to sit at. Others came shortly after us. Nice decor & music. Liked the atmosphere. Highly recommend. We will be going back again soon.

Met up with some friends here for dinner on a Tuesday. We got there around 5-5:30 and were basically the only people there. The waitress was very kind and helpful at explaining the difference dishes to us. All of us were very satisfied with our meals. We are still talking about the dan dan noodles even weeks later! (My dad says the chicken dan dan was better than the beef dan dan) The scallion pancakes made a good appetizer but you don’t really need to eat more than one - I promise you’ll want to save room for the main courses! Also keep in mind that they don’t do separate checks here.
All in all, would definitely be back! Best noodles in Madison!

Yummy flavors, but I ordered a dish specifically because the menu said there was jalapeños in it (spicy garlic chicken) and there weren’t any :( I also asked for it to be more spicy, but it wasn’t honestly at all.

I went with my husband and 2 year old here for dinner and it did not disappoint. We tried the sesame chicken, cashew chicken with cat ears noodles, and crab rangoons. First off the crab rangoons were super deli is and the sweet and sour sauce was very so good! My husband was raving about it! The portion sizes were huge and both my cashew chicken and his sesame chicken was delicious! Even my two year old approved. I will be dreaming about those handmade noodles everyday🤤 It was the perfect balance of a dish and will probably be my go to from now on cause when I love something, I want that and nothing else. The staff were super friendly and great with my son. Can’t wait to go back again!

Love the new Taigu Noodles location. You get the same great food but now there is also ample parking. The homemade noodles are the biggest draw for us, but the spice levels and use of great ingredients makes this our favorite for Asian food.

Update July 2025:
We come to Taigu often, and have for years. Yesterday was the first time we picked up food from the new location, so not sure if this was a factor. The food was bland, no flavor, felt like they forgot to add sauces when stir frying it. The pasta quality was still superb but the bland flavor is really disappointing. This is an expensive treat, and spending so much money and finding bland food for all the dishes (x3) we ordered was a big let down.
Old review:
The handmade noodles, especially the cat ears, are really a delicacy. This might be my favorite Asian noodle based meal ever. Incredible flavor and care. The vegetables are fresh, crunchy, amazing. And the protein , chicken, beef and shrimp is delicious.

We came during lunch when the prices were lower but I wouldn’t say that the food was worth the price. We started with crab Rangoons and they were basically straight cream cheese with a bland sauce. Definitely disappointing. I ordered the sesame chicken and it was pretty average, not too flavorful. I will say I should’ve ordered the noodles instead. The interior is very nice and the employees were welcoming. Overall it’s not bad food, but I think the prices are too high for what you get.

Taigu is a solid choice if you like Asian food and are looking for an alternative to the typical American Chinese restaurant. Their spice levels are tailored to their location in Wisconsin, so if you like spicy food, be sure to order your meal extra spicy!

We love this place. So if you are looking for authentic Chinese noodles and other popular dishes, here is your place.
My friend was from the same place as the owner, she discovered this back in 2021, she drove all the way from Minneapolis here just for their food. We became friends with Hong ever since. She is such a kind host, always so friendly and smiley, making you feel like her long lost friend. She’s also a great artist, love all her beautiful artwork. I think she’s integrating her fine art taste into her business.
Give it a try and decide if you like it or not😊 at least you will have a free art exhibit .

First timer here! It’s been a challenge finding a restaurant that serves amazing Chinese food. By far, Taigu is my all time favorite. I ordered General Tso, Sweet and Sour chicken, and veggie fried rice.
Everything was flavorful, delicious, fresh. It’s a bit on the pricier side, but if you want quality, don’t hesitate. The portions are large!

My sis and I have been all over Madison and outlying areas looking for good authentic Chinese food. Taigu’s wonton soup is the closest we have found to Hong Kong wonton and it is DELICIOUS. The soup is as good as my dad’s. We have tried the spicy beef noodles with pickled mustard cabbage - OMG. We have yet to try the cat ears but that is next. The portions are surprisingly generous and the flavors are excellent.

Took my family and had a delightful evening at Taigu. We shared five different meals in two different soups and it was all fantastic. Our waitress had a smile on her face and took great care of us. We have been there many times and have had a great meal and experience every time. We have also sent many of her friends there and anyone everyone of them said how good it was. I highly recommend it. Parking was also easy to get in and out.

3/29/25 online order... food tonight was horrible- inedible!!! ... i waited 1.5 hrs for my food and wasted over $100 ... & you forgot the large rice on top of everything... time before i waited 2 hrs... you need to do better!!
tonight i sat & watched a steady stream of people pick up their orders.. watched two different couples go in ... be seated ... eat their meal & leave with to go bags!!! somehow my order still isn't ready...
email says the order will be ready at a certain time ... I call to make sure it's ready and the older lady rudely says I don't need to call ... she will text when the order is ready ... then I wait and wait and wait ...no text... I go in and the order has been sitting there on the counter getting cold ... this is always the scenario .... your establishment is unorganized & communication is very poor ... i'm kicking myself for the time & money i wasted & i couldn't even eat the food after all that!!!

I’m a big fan of hand-pulled noodles and can’t get them locally where I live so I was thrilled to see an option when visiting Madison for work. Taigu delivered on all expectations and more. The restaurant is very clean and beautifully decorated! Met the owner who was very grateful for our business. It’s so good I had to come back a second time for dinner before I skipped town. I’ve been going to Taigu for a few years and they’ve always been delicious. I’ve tried a few of their dishes and they’ve all been flavorful. If I want something vegetarian, I’ll order the noodle dish with lotus root and wood ear mushrooms in addition to other vegetables. My recent go to is their spicy eggplant chicken dish. It’s been awhile since I’ve ordered Taigu, so I got some last night for Valentine’s Day. I usually order from their original location in Middleton but I saw that they have a limited menu there. I was wanting to order their pork dumplings but the Middleton location didn’t have it on the site, sad. I also noticed that they’ve entirely removed the eggplant chicken noodle dish that I used to order. What they have now are 2 options (and a 3rd vegetarian one). But none of them are what I was specifically looking for. Option 1- get the eggplant chicken with the cat ear noodles. Option 2- get the chicken eggplant dish, no rice and pay $3 extra for noodles, option 3 is the same er option 2 only it’s the tofu eggplant item on the menu. This frustrated me because their prices have gone up quite a bit. They were already a little pricy but the price has been worth the portion size and flavor. But It was disappointing to pay almost $40 for a dish of noodles and an order of pork dumplings. Sorry but that’s a lot of money for an entree and appetizer. I don’t understand why the spicy eggplant chicken noodle entree was removed from the menu. Yes I will be back but this is definitely a special treat, maaaaybe once a month kind of spot.

Hello hello...
A new Chinese favorite in town...
We were a big party of 18 or so people, we reserved a table and they accommodated us well.
I loved their Veg&Egg fried rice. I know it's difficult to get it wrong, but it's difficult to get it this yummy. I have tried Fried-rice in many other restaurants, this definitely comes towards the top.
The Spicy-Ginger-Shrimp was a fabulous addition to the fried rice.
The portion of the dishes were generous...
The owner Hong was very friendly and gave us on-the-house Sesame balls... Yummm!
We are going back soon...

The food is delicious, as always, and the new location is great. Lovely atmosphere inside, and ample parking outside. The service was quick! I ordered carryout, and only waited about 5-7 minutes, I'd say. Many clearly labeled vegetarian options. I would recommend adding extra veggies, a $3 option, for even more deliciousness! (I didn't do this and wished I had.) I don't live on this side of town but will happily make the trip for Taigu!

Visited this new location and found it funny to be sitting where the cereal aisle was when Knoche's market was there! But they've totally renovated the building inside and outside. I'd appreciate a lower level of lighting, but otherwise an immaculate space. The food was great! Huge portions so enough for a meal or two at home after. And the pan fried dumplings were superb. We came at a busy time so we had to wait a bit for service, but the bustling atmosphere was good to see. I hope this neighborhood gem stays busy and open as it's great place for a take out order or a sit down meal. Congrats! P.S. And very nice staff there!

Loved the noodles I got, but i asked for extra chicken and barely got a regular amount. Paid 4 dollars for it. Id say overpriced for a pile of noodles with a couple pieces of chicken for 25 dollars!!!. After waiting inside for 20 minutes after driving an initial 25, order came out after standing and waiting.Opened box with spring rolls right away, and they were cold. I also ordered 6 on the app, only got 4.Drove halfway home before eating, and the noodles were cold as well . I have had previously good experiences, so i am disappointed in this.

Huge portions, good service, dumplings were great, next time I would skip the hot tea (which was tepid). I truly enjoyed this place & would go back. However, it might sound like I'm nitpicking but I can't give a 5 star rating. The noodle dishes were good but lacked the WOW factor. Maybe because we didn't order the spicy versions, the meal was good but rather bland. The owner(?) was talking to a couple she obviously knew, then went back behind the counter. Too bad she didn't say hi to the other tables, I would have had a few questions for her. Well, maybe next time.

We chose to visit after reading many positive reviews. We had a pleasant experience overall. Service was prompt and friendly. I ordered the Dan Dan noodles and my daughter ordered the Curry noodles. The portion size was gigantic and the entree price was $18. I honestly could do with less portion and a price closer to $14. I was eating leftovers for days. The noodles themselves are delicious and well made. I was disappointed in the amount and flavor of the sauce (noodles on the dry side). Do not expect entrees to include assorted vegetables as in traditional Thai or Chinese dishes. The noodles came with the protein, some garnish, sauce and nothing else. The menu was clear about this; my expectations were flawed. To be clear, Taigu is all about the noodles!

We picked up the Taigu noodles with chicken and vegetables. The medium spice flavor was good, but we found only a few small bites of chicken and only a few small bites of broccoli in the entire order. So we paid more than $20 for a pile of noodles. We ended up not eating it, but rather going to the store the next day and buying fresh chicken and broccoli to cut up, cook and toss into the noodles to make it a real dinner that we could actually enjoy.

When you arrive at taigu, an overworked 13 year old will seat you. They then will escort you down a hospital-like hall to a bare booth with absolutely nothing on it. The booth won’t even be facing a window, it will be facing a wall. The entire room will be echoey and conversations will be very muddy. Your waiter will be a 15 year old boy with a 15 second attention span. He will rudely interrupt you. He will not ask you how your food was. He will bring the check 9 minutes after you are served. He does not care that you have most of your food. When he brings the box, he holds it in front of your face. When you sheepishly shuffle out, two grown women will act like they can’t see you while you try to pay.
If you are drunk across the street, you should head over. You will probably do a better job.
There also was not a sighting of a single chopstick.
How shameful.

Been coming here for over 5 years. Unfortunately, since opening the 2nd location food and service is no longer at the level it once was.No longer my weekly go to for dinner
Hey Hong - Thanks for getting back to me. I was referring to your Middleton location in my comments. I had the same dinner both times, Taigu Cat Ear noodles. Last time the meal was rather small. I usually get two meals out of it, but this time there was barely enough for one. Tonight the dinner wasn't ready on time and then I was told you were out of cat ears. Neither are big issues, but it is not the same level of service and quality that I have grown use to.

With apologies to Charles Dickens: “Beware the Maitre D’.”
“The master … turned very pale. She gazed in stupified astonishment on the rebel for some seconds, and then clung for support to the copper. The assistants were paralysed with wonder; the servers with fear. “What?” said the master at length, in an agitated voice. “No!”
“‘Please, ma’am,' replied Oliver, 'We don’t ask for more but may we replace these lukewarm noodles with fresh hot ones?”
—-
Stranger than fiction, the plate replacement suggestion had come not from us but from our server. We had noted that all the noodle plates were lukewarm. Apparently the new large Taigu space had led to some economies of scale, plunging their usual five star service to a kind of dining experiment. We picked just one for replacement. The server came to take the plate away, but the master returned with it and placed it on the table across from us—“We microwaved them,” she said—and she left them there as “take them or leave them.” “We cannot remake an item on the menu,” she declared.
We looked to each other at the table for gentle follow-ups to the master’s shock response—we wished to avoid the cataclysm of having no Taigu garlic eggplant at all. Two diners at a table next to us came over to say, “We heard this, and our noodles weren’t hot either.” Meanwhile, to add insult to injury, an apparently new heat vent to replace the shop that had stood here for decades poured out so hard on our Table #3 it alone could have reheated all the noodles.
As to our conclusions about the new location on Old Middleton Road, you will be happy if you don’t cross the master and do enjoy lukewarm noodles. The food remains delicious as the Middleton takeout we have enjoyed many times, though the heat venting is out of control and the service might benefit from a “maître d’” choosing someone other than Dickens as a model of customer interaction.

Prices might seem a bit on the high end, but you get a ton of food. We heard about Taigu being an authentic Chinese Taigu restaurant before and how good are their dishes and hospitalities. As a person who came from Taigu, China, I was very curious about the foods there. When I showed up with my family to Taigu, we were all delighted with the authenticity and delicacy of the atmosphere of hospitality and the flavor of authenticity.
A great place to be for noodles of different kinds and the specialty food like “cat ears”. A place to be in the western Madison to relax, enjoy the owner’s own paintings on the walls and savoring delicious foods .

This restaurant is fantastic. We have been several times now and the quality is always consistently great. Their hand pulled noodles are like nothing I have had before - thick, chewy, and long. Dumplings, scallion pancakes, various types of noodles, sweet and sour chicken - all excellent items. Plenty of vegetarian options too in both noodle and just vegetable dishes. The last time we went they were able to make tofu skins for me with my eggplant dish which satisfied a craving I had for months prior. Their portion sizes are HUGE - you will leave with leftovers. They have two locations now and the new one on Old Middleton Rd is more spacious than their original location if you're looking to dine in. And the service is just so good - at both locations. Everything comes out correctly and the food comes out faster than any restaurant I've been to. As long as we are in the Madison area, we will continue to frequent Taigu.

Exceptional food. Yea you might have wait sometimes, because the secrets out this place is delicious and everyone wants some. Spicy Tofu with Eggplant is something we almost always order and the cat ear noodles. Portions are generous, but you’ll want leftovers and wonder when the next time you can come back. Locally family owned business.

DELICIOUS!!! I had the Taigu Fried Rice and it was amazing. Service fantastic. Other photos from my dining partners. The to-go containers are the Taigu Spicy Noodles and the other is beef and broccoli with oyster sauce over noodles. Everything was excellent.

Found Taigu last year and couldn't wait to come back to try it again. Especially after seeing the news video on YouTube. To know the love and care they put into the dishes made this experience even more special. Would definitely recommend and will be back.

Visited during their soft opening. Every entree at our table for 5 was excellent. We had cat ear cashew chicken, eggplant and tofu, Mongolian beef, pot stickers, and crab Rangoon, and another beef dish. The extra handmade noodles we ordered were amazing. Service was not great, as can be expected during soft openings. Our server seemed very inexperienced, but pleasant otherwise. Drink options were only coke products, tea, and water. We will be back for takeout. Wonderful to have this new restaurant a part of our neighborhood.

I fully understand that they've opened recently. However, that doesn't excuse the extreme lack of service we received. After we were seated we waited for about 10 to 15 minutes before calling it quits. The breaking point was when a table that arrived 5 minutes after us received water and got their order taken while we were never acknowledged.
I've been to the old location before, the food was good and so was the service. It's unfortunate we weren't able to try the new place.
We weren't the only ones waiting a long time either. One table has to resort to flagging down random workers to get a container for their food and the bill.
I hope they're able to figure out their front of staff problem, when they do I'll come back.

Great flavor! I was curious about the noodles so we ordered Dandan Pork. The noodles are sturdy and absorb flavor; we selected mild spiciness but should have gone higher because the noodles balance the spice. We also ordered the spicy eggplant/tofu and it was heavenly. The eggplant had been roasted. We selected medium spiciness and, again, could have gone up a step. I was surprised the tofu dish didn’t come in a sauce but the flavors came through better this way. We ordered a side of rice but didn’t need it. Very large portions—one order easily serves two people or makes great leftovers.

First, the food is delicious. Spring for the cat ear noodles. I'm not sure what about them is so good, but they just are. I promise. Also, the takeout portions are insane. It's great reheated or just cold out of the fridge.

Amazing food, as always! My boyfriend and I tried their spicy ginger beef cat ear noodles with jalapeños and we got some seasame balls for dessert. So so good. Everything is always so fresh and flavorful. We split the one noodle dish and still had leftovers. Taigu still ranks as one of my top places for food in Middleton!

The food is always good, if/when you get it. 7/26/24 - Placed an online pickup order at ~8:15pm on their website portal (20 min pickup time). Arrived at ~8:45pm. They asked for the name on the order, checked my order, and said it would be a couple more minutes. I sat there for an additional 15 minutes. At that point, the front staff went to check with the back staff. They then informed me that I would not be receiving my order as all the cooks had left. All employees seemed pretty clueless. For our previous order before this one, we didn't receive rice and were told they were out. This would never happen at Ichiban. Perhaps they should focus on this restaurant before opening the new one in Madison...Just sayin'...

I came in around lunch time (11:45am) and was seated right away. The place had customers but wasn’t too crowded. I ordered the four colored vegetable cat ear noodles with a hot green tea. The servings were huge and the food was delicious. The lunch time rush started to come in while I ate but the staff were still attentive and friendly. I recommend the cat ear noodles for any dish - they were chewy and delicious!! I brought some left overs home and they were just as good the next day for a meal.

The portions are not worth the prices. Got Mongolian beef and the amount i got compared to the pictures they have on their site didn't match at all. There wasn't even enough to cover the bottom of the container it came in. For 20 DOLLARS!!! It was 100% not worth it. But to their credit everything tasted really good. The beef was tender, the fried rice was good. The dumplings were kind of dry but good. Just so expensive for so little food.

I took an hour bus ride to go here and it was so worth it! I highly recommend the Youpo Mian with numbing spice if you like spicy food! Huge portion, It was perfectly balanced with salt and the sour from the aged vinegar. The meat was super tender. I also recommend the scallion pancake to mop up any leftover chili oil

I've tried tomatoe egg noodle a lot of places in madison and this might be the best I've had. Perfect on a rainy day, It did have a pepper next to it on the menu indicating spiciness but it wasn't spicy at all I added some chili oil and it was perfect. Service was really good. No asthetic frills but the food makes that irrelevant. Will certainly be back to try more.

We got the crispy chicken dumplings (#1a) and the fresh pork spicy cat ear noodles (#28). The cat ear noodles were SO GOOD - I especially liked the wood ear mushrooms in it, they were absolutely delicious! This food was so delightful. I’ve heard good things about Taigu and wanted to give it a try myself, and I am very happy with the experience. The portions were large, so one entre can feed 2 people. I would recommend this restaurant to anyone! So good!!!

Generous portions, authentic homemade Chinese food. Definitely way better than typical "American Chinese" restaurants where everything tastes the same and you feel terrible afterwards. Very nice owners. Only downside is the prices are definitely at a premium. Expect to pay above $20/person after tip (most dishes are $17 - $19)

I stopped at Taigu for the first time this week during my lunch with a few coworkers after hearing it recommended by several people in my office. All staff that we interacted with were polite and offered suggestions on what to order. The food came out quickly and the servings were large and each had its own flare. I would highly encourage anyone in the Middleton area to try it.

Strictly regarding the food & portions, I’d give 5 stars. Otherwise, I give 2.5 stars simply because EVERY time I order takeout from this place (which is usually around 7:30-8 because I often work late) their first & only concern is if I’ll be there before closing (8:30 pm) to pick up my order. I’ve had them deny me service multiple times because I call in (or come in) on a weeknight at 7:30-8 to try & order a meal. When I used to work in food, we served customers all the way up to closing — the owner would get upset if we turned away customers even 5 minutes before closing.
It’s annoying enough that most decent food places close by 8 or 9pm around here… it’s even more annoying when a restaurant says they’re open until 8:30pm but then they stop taking orders as early as 7:30pm. Please make it make sense!

Great food! My dish was on the salty side, but yummy! The pork eggrolls were very good! Third best in Madison area in my opinion. Server was very pleasant but never very vigilant. It was a warmer day but I wore a hoodie because restaurants are usually pretty cold. Wow! Thank god I wore my hoodie! Jet of cold air blowing on me the whole time. Even my partner who is less cold sensitive remarked how much nicer it was outside than inside the restaurant.

Taigu is amazing. I don't really like Chinese food per se but I fantasize about Taigu half the time I'm hungry. Honestly, before eating here, I didn't even realize how good Chinese food could be.
The portions are huge and probably meant to be shared. Realistically, you'll end up taking half or more home with you, but, the food is so damn good, I just eat 5,000 calories of noodles in one sitting like the colossal idiot I am. If you're vegan or vegetarian you definitely have options here. The service is great, staff is friendly and helpful.

Very disappointed with my latest experience here. I ordered (by phone) the dan-dan noodles with pork and eggplant, for takeout. Mentioned that I want them warm - the person taking my order had a brief pause, but said yes, warm. The dish looks beautiful in the pictures, and I had it there in the past - it's a little spicy, the pork and the crunchy peanuts are great, etc. Well, I got home, and there are no peanuts, the dish is not spicy at all, I think they just gave me some noodles with eggplant and a trace of pork. Certainly not what I was hoping for.

Authentic Chinese restaurant with a surprisingly large menu. This place is not your run of the mill Americanized Chinese restaurant. They serve authentic Chinese fare with an emphasis on their handmade noodles. The menu offers some more Americanized options for those uncomfortable with branching out. The design is simple but comfortable, with surprisingly fancy ceiling tiles.
The restaurant was busy during our visit, late on a Wednesday evening. The restaurant was about half full with frequent pick-up and delivery orders leaving the door too. The staff were friendly, and communicated deliberately to ensure no screw-ups due to a slight language barrier. The prices are almost too generous. The portions were huge! We ordered two of the pan-fried noodle dishes-chicken and beef. We also got an order of rice noodles with tofu and a scallion pancake for an appetizer. The one downside of the meal was the scallion pancake was served with sauce (and none on the table). The pancake was plated, but the noodles came wrapped in foil within styrofoam takeout boxes. This was an odd but sensible choice, as the meals were enough for at least a lunch worth of leftovers. The noodles were all delicious. The rice noodles were ordered with light sauce due to some food insensitives. Even then, that dish had plenty of flavor. This is one of the few authentic Chinese places I am aware of in the Madison area, and one certainly worth visiting.
