Very cute restaurant/coffee shop. Great menu options - and it was nice to see that the crepe and bubble waffles toppings could be interchanged.
I did really like their seasonal menu - and will be back for that.
Drinks were amazing too. Not too many options for sugar free flavoring.
There is limited seating inside for 1-2 people seating.
My only complaint is that the table/bench seating by the back door entrance. The table height is too tall for the chairs.

Friendly, but not over-welcoming. The decor was gorgeous, and the fruit bubble waffle was delicious. You stand in line to order then recieve numbers to take with you when you sit. You'll also have to put your plates in a standard above garbage bin, so don't expect full table service. My friend's muffin never came until she brought it up, but it was corrected easily.

How do you like your waffle?
I’ll take mine Southwest. The food here is incredible — this restaurant feels almost out of place, in the best possible way. It shatters the cliché breakfast menus we’ve all come to yawn over. The vibe is entirely its own: authentic, unexpected, and refreshing.
From the large library-style lounge chairs to the repurposed woodwork, it feels like a café plucked from anywhere in the world — equally at home in a bustling metropolitan city. The drip coffee was excellent, and the portion sizes were just right for us.
If you’re looking for a true escape from the ordinary, this is your place.

I didn’t know what to expect of this place but it exceeded all expectations. I walked it and was immediately delighted by the ambiance - bustling but not overbearing. The food was good, the coffee was great and the service was absolutely excellent. I had a bit of a problem figuring out what I wanted (new food restrictions in my diet) and the cashier was so understanding and authentically helpful and patient. I was being the kind of person that annoys me and she took it in stride.

Hark, what treasure is this we've stumbled upon! A truly surprising gem amongst the local spots. For a time, they presented several quite agreeable vegan options suitable for the breaking of one's fast, plus bakery delights, and even offered various non-dairy milks for coffee concoctions – a most welcome sight!
The attendants perform their duties with amiable grace and reasonably swift efficiency. And the fare itself, I must say, was rather pleasing to the palate. At times, the place does draw a crowd, yet the hubbub seldom reaches unreasonable levels.
But oh, woe is me! It must be noted with a sigh that the majority of those wonderful vegan breakfast selections have since departed the menu. A true shame and disappointment for those of us favouring such options!

I recently enjoyed a wonderful breakfast at Exchange Eatery in De Pere, and I must say, it was a delightful experience overall. The ambiance was warm and inviting, making it a perfect spot to start the day. We ordered a variety of dishes, including the breakfast sandwich, Wisconsin omelette with a waffle, s'more waffle, and the berries waffle. Each dish was not only tasty but also beautifully presented. The standout for me was the waffles—they were unique, light, and fluffy, truly setting a new standard for breakfast treats. The portion sizes were just right, leaving us satisfied without feeling overstuffed.
The coffee was outstanding, enhancing the overall experience with its rich flavor and perfect brew. Each bite of our meal was a delight, and I appreciated the attention to detail in preparation and presentation.
The only critique I have is that the servers should also be able to take orders at the table, as they serve as well. It would streamline the process and enhance the dining experience.
Overall, Exchange Eatery is a fantastic spot to enjoy a delicious breakfast. With its mouthwatering dishes and pleasant atmosphere, I highly recommend it to anyone in the De Pere area!

Where do I begin, the Exchange is truly my happy place, hence why i’m there like every day lol, it has become somwhere that has helped me in so many ways, from being a place to study to become a CNA and RBT, to dates with friends, to a place for heartfelt conversations, etc. it is truly so special!! It is absolutely BEAUTIFUL inside! I love how huge and open it is with so many places to sit. The soup, chicken and waffles are SO yummy, but my favorite is their iced mochas!!! The staff are truly incredible, I don’t think i’ve ever met more friendly baristas at the register! Always asking about your day, how you are, any fun plans, they understand it’s not ONLY about taking your order, it’s about community!! HUGE shoutout to Abby! I think she is the manager or owner who remembers every guests name, always has a smile on her face, and will go out of her way to help anyone have a fantastic experience! For example, today I was walking out and I noticed Abby stopped what she was doing to listen to a customer express her feelings who was crying on her computer, Abby you are so so caring and your passion and dedication for The Exchange is unmatched. THANK YOU THE EXCHANGE!!!

Run don’t walk to here…These are the best! We got eggs Benedict chicken and waffles, cinnamon roll and strawberries and cream waffles all were delicious but we liked the sweet ones better. My new favorite breakfast worth the 25min drive to get them! They are gf but don’t taste it so perfect for the person who has to be gf and the person that doesn’t!

Everything about The Exchange was great! They have expanded their food options. Their prices are beyond fantastic for what most places charge these days. A half waffle is under $4! My daughters hot cocoa was $1.50. The girl at the register was kind. I tried the sweet potato waffle and it was really good! I also had the flight of coffee which was a fun experience. I also dig the industrial look.

Was looking for a new place to try out with my girlfriend. Found this place and it did not disappoint! They know how to handle everything when it gets busy. The food was the best breakfast we have had! The waffles will not let you down! The presentation was amazing, it made our day to know we were treated with so much respect. We waited for about 20 mins for our food, they make it when your order comes in. We were not upset about waiting for that time. The vibes in here are great! Very welcoming and lots of space to sit. This place really gives skinny housewife queen vibes. The food was pretty great especially my crepe. However, I wanted sausage and bacon and it was very obvious that the sausage, especially, was frozen. I think frozen sausage is alright but if it’s gonna be turkey sausage it should be fresh or just not turkey sausage. All the workers we interacted with were very kind and courteous. Overall, if you want a good crepe or salad and don’t want any breakfast meat this is your place however if you are a big sausage person maybe go somewhere else.

We came here because my daughter has Celiac and they make GF crepes and waffles. It is the best decision we made for our short stay in Green Bay. The waffle with chicken and hollandaise was amazing!!! My daughter ordered the GF crepe with eggs and bacon, which was also good...BUT the item that was absolutely sublime was the GF cinnamon roll crepe with candied pecans. My daughter stated this is "the best dish I have ever eaten in my life". I would have to agree!!! As a side note, I had the almond cookie green tea. If you love green tea, try it. You will not be sorry!

Food is tasty, unique flavors, however the actual size of the plates themselves, relative to the portion size of food, is way too small. My food takes up 95% of the plate and I feel so uncomfortable eating and if you have a physical limit, the tiny plates make it inaccessible and messy and reiterates the discomfort. Coffees are 100%

This is one of the best coffee shops in the country. Period. They have somehow curated a space that you can feel comfortable relaxing or working. Whether you're meeting with a friend, a business associate, or you just want to be by yourself... the exchange has a spot for you.

This large cafe has a great atmosphere with lots of seating options, each with its own mood and feel. Seems like a great place to hang out. The menu however is disappointingly built around everything wrapped in bubble waffles which are not that great. It's hard to decipher the dishes, firstly, and then underwhelming when they show up. Bland and forgettable. The Mexican Mocha I was looking forward to ended up being heavy on the cayenne and unenjoyable. The chocolate croissant was top notch.

I had high hopes for brunch here based on reviews, but the food was just meh. I had scrambled eggs which were incredibly dry and flavorless. Turkey bacon that looked like it had been deep fried it was so crispy, but again not much flavor. The fruit side was very good. Ripe strawberries, apple and banana. It was also beautifully presented.
My daughter had a sausage sandwich and egg on a bubble waffle. It was ok, but not especially memorable. The hazelnut croissant was excellent!
Seating on a Saturday morning is difficult to come by, so be prepared for that if you go.
Food took about 30 minutes to arrive, but we were warned about that and were fine visiting with friends.
I feel like there are other much better choices for lunch, so won’t be returning. Give it a try and see for yourself. You might love it. We found it rather forgettable (except for the croissant)

A Visit to The Exchange Coffee, Mercantile & Eatery in De Pere
Introduction:
Recently, my family and I had the opportunity to visit The Exchange Coffee, Mercantile & Eatery located in De Pere. I'd like to share our experience with you, highlighting various aspects of our visit.
Coffee Temperature:
One notable aspect of our visit was the temperature at which their coffee was served. The coffee at The Exchange was served at a scorching temperature, well above 220 degrees Fahrenheit. While I prefer coffee brewed within the 195 to 205-degree Fahrenheit range for optimal flavor extraction, it was evident that The Exchange had a different approach. Although I didn't challenge their method, it did deviate significantly from what I consider an ideal brewing temperature.
Pricing:
The Exchange Coffee, Mercantile & Eatery had a policy of charging an additional 3% on credit card payments. While this practice is not uncommon in businesses facing financial challenges, it's worth noting. It serves as a reminder of the economic hardships many businesses face, and it's not something I found unreasonable.
Food Quality:
One of the more disappointing aspects of our visit was the quality of the food. Although the presentation of the dishes was appealing, the taste left much to be desired. The flavors were lacking, and it seemed that the emphasis was more on aesthetics than on the taste itself. This was a letdown as we had hoped for a more satisfying culinary experience.
Overall Impression:
In summary, our visit to The Exchange Coffee, Mercantile & Eatery was a mixed experience. The excessively high coffee temperature and mediocre food quality were notable downsides. However, it's important to acknowledge the challenges that businesses in the area may face, such as the additional credit card fee. It's possible that similar cafes in the vicinity may have similar issues, which could explain the dominance of chain coffee shops in the market.
In the end, our visit left us with the impression that The Exchange Coffee, Mercantile & Eatery offers an average experience overall. While it may not stand out in terms of coffee quality and food taste, it does provide a unique ambiance and local charm that might appeal to some patrons.

Order the bubble waffle and pour over.. The pour over was muted and and not soulful. Very bland. They used the Tanzian Peabody for the origin, which is normally very acidic, bright full of flavors such as berry, jasmine, and choclate. This was just very boring. As far the bubble waffle goes, meh. I mean it's unique in its own right. I guess the biggest let down is it took 45 mins to get the coffee and the waffle. For the price point of $16. It's a huge let down. If I have a leisure morning I might come back, but will not bring my clients here. If I had to sum it, another "trendy coffee shop" that is trying to bring in the hip generation with over complicated coffee milk shakes.

I had the rich and sweet flight. I prefer it to be more sweet, so I was able to add some sugar packets in 2 of them, but the coffee with the ice cream was perfect!! Also had the maple bacon sandwich, and it was delicious. My sister had the green eggs and something, and that was soo good.

The Exchange is a great place to meet up with friends and have breakfast, but I saw that many use it as a place to work and enjoy a coffee. Their coffee is strong and their crepes are delicious. There is no table service, you order at the counter and pick your seating. They also have a small gift shop with books, jewelry, and clothing. My friend and I enjoyed talking for a few hours over breakfast.

I met a friend here today for lunch. It took almost 40 minutes for us to get our food. It was good, not excellent. The staff was polite. The vibe was relaxed and welcoming with a hit of cool. But 40 minutes for a crepe and eggs? Ouch. We were both late heading back to work. It also seemed overpriced, but, to be fair, inflation is impacting everyone.

I am currently eating this delicious meal! My family and I had a great time at The Exchange. I had Chicken and Waffles, the kid had Strawberry and Cream Waffles, and my wife had the Classic Breakfast. Each plate looked enticing and the food was appetizing! This was my first time having bubble (egg) waffles and they did not disappoint! I also ordered a London Fog Tea which was delicious!
The atmosphere is awesome. Exposed brick, piping, and wood beams lend to the industrial but welcoming vibe that the name The Exchange implies. We definitely enjoyed everything about our experience here and probably would be back again. As a tip, you do have to clear your own plates. Doing this wasn't a problem at all and adds to the chill, relaxing, not stuffy atmosphere. Well done The Exchange, you are doing a lot right!

Really great food! Their coffee was pretty great as well. The atmosphere is a very relaxed atmosphere and the staff was great! It's a little on a pricier side so it'll be one of our "go out for a treat" places and probably without the kids, but will definitely be back!

My husband and I stopped here about six months ago when we were in the DePere area and absolutely loved it. We brought our daughter back when we were going to watch a St Norbert swim/dive meet. Great food, A+ atmosphere, incredible coffee. If you are rushed for time be prepared that you should just stop for coffee and come back when you aren’t under a time constraint because the food doesn’t come out from the kitchen quickly. Well worth the wait though. We met the owner (a St Norbert grad herself) who was working hard and still stopped to chat. I would absolutely recommend this place!

The best scones you will ever have. Also an awesome coffee establishment with great atmosphere and very bougie. Their scones are how scones are supposed to be. Moist, warm, being able to eat it with a fork. Waffles were great, we tried the seasonal special and the combination of flavors of apple, cinnamon, and whipped cream was perfect in the fall. The only suggestion would be to add more apples to the dish. It just needs a couple more apples.

The other day I went for breakfast and coffee with my girlfriend and it was our first time at The Exchange. The place is very cool inside and offers lots of seating options. Could easily hang with one friend, a larger group, or alone! The food menu was small-I only saw crepes, waffles, and some sides-but the online menu looks like they have a lot more wonderful options! I did not see any of these when I was there???
You order at the counter and food is then brought to your table when it's ready.
I had the strawberry waffle and turkey bacon. It was DELISH!
I also had the daily special iced coffee-it was tasty but a little strong for my taste. Next time I will ask for extra cream!
I will definitely be back!

I absolutely love this place! Their coffee is so good. I was one of those Starbucks lovers for years but now only very seldom do I go there and only when the Exchange is closed. My favorite is their lavender latte. They also have a large menu for breakfast and lunch! And everything I've tried is great. Their bubble waffles are unique and very good. The coffee shop is awesome and very relaxing to sit while enjoying your coffee, with plenty of seating options. The staff is ALWAYS so friendly. The only bad thing about this place is that they aren't open more😉 as they have stayed to their new covid hours, closing at 2pm. I always keep their coffee beans at home for when I can't get to The Exchange. Best coffee and coffee shop in town! They also have their own barber shop attached which my husband goes to and likes. And he's very particular about his hair.

The food was just ok. The chicken and waffle was essentially a waffle (not bad) with a chicken strip from Costco cut up. A nice attempt at a classic dish but really missed the mark.
Also a 30 minute wait after placing our order at the counter in a pretty empty restaurant.
Overall a swing and a miss. In a proper city this establishment would be around about a minute.

Love this restaurant! I ordered the Honey Mustard Chicken Crepe and it was very delicious! I am a foodie and a rather picky eater because I cook a lot for myself and hubby and oftentimes like my own cooking better. My friend had gluten free pancakes with blueberries and REAL Maple Syrup, and she said it was very good as well! The inside of restaurant is very hip looking, with all kinds of different architectural elements. They also have all kinds of fun drinks- I had Blueberry Matcha Lemonade! It was delicious!

For the past few days I have had a tremendous chocolate craving that was fueled by summer advertisements of people making s’mores. This morning , when I stopped in for my first visit at The Exchange, I noticed they had hot Chocolate. Their hot chocolate is the best I have ever had, including international travels. It was so creamy and smooth and the right amount of chocolate.
I also had their Avocado, egg & tomato breakfast sandwich which was made with one of their bubble waffles. I was skeptical about a sandwich made out of a waffle but it was nice and fluffy. It was a welcome change to the dried out piece of toast or chewy bagel that normally accompanies an avocado/egg sandwich.
I will definitely be returning and look forward to trying new menu items.

My new favorite coffee breakfast shop!!! The ambience is AMAZING!!! Reminds me of a coffee shop you’d see on tv. Staff are extremely nice specially when they can tell your new like I was.
